Busy Family Dinner Idea- Bacon Cheeseburger Casserole Recipe
I will come right out and say it, this is not the most healthy casserole recipe around but it sure will warm your tummy and be nice and hearty on a cold winter evening! I spun this recipe off of one from a good friend in NC and it has become a family favorite and takes me less than 15 minutes to make (sometimes less!)
It’s definitely a recipe that can be prepared ahead of time and then popped in the oven after a busy day of work, running around or doing something fun.
1 lb. ground beef
1 small onion, chopped (optional)
1/2 cup bacon bits (I use the “real” ones, Costco brand)
1 can condensed cheddar cheese soup
1/2 cup sour cream
1-2 tablespoons grill seasoning
3-4 slices of american cheese
frozen tater tots
Preheat oven to 450. Fully cook the ground beef and drain off any grease. While cooking, put in the onions when the meat is halfway done. In a 1.5 quart casserole dish, mix the soup, sour cream, bacon and seasoning (season to taste) and then mix in the meat/onions. Smooth it all out evenly in the dish, top with slices of american cheese evenly and then top with tater tots evenly. Bake at 450 for about 45 minutes, depending on how crispy you want the tater tots. I broil it for just a tad at the end to make the edges really crisp, as you can tell from the photo.
Enjoy! We’ve mixed in corn, chopped bell peppers, switched the cheese flavor, used ground turkey etc. so it’s a really flexible recipe. Sometimes, I cook up a bunch of ground beef and put it in baggies and freeze for use over the course of a month in recipes. When I have those already made, this recipe takes hardly any time at all to assemble. I even use frozen already chopped onions too to make it super easy!
