Let’s go make the Best Oatmeal Pumpkin Cookie Recipe! Nothing says fall like PUMPKIN! I love it in my lattes, my bread, my pancakes, my pasta, newly in my doughnuts (Pinterest where would I be without you?!), but most of all….my cookies! One of our great fall traditions growing up was making a decorating oatmeal pumpkin cookies with my mom and sister, a tradition I hope to keep going with my kids. Here is my recipe but when it comes to decorating, get creative! 

Go find a pumpkin patch!

Ingredients:
2 cups flour
1 cup oats
1 tsp baking soda
1 tsp salt
1 cup margarine or butter softened
1 cup sugar
2 tsp cinnamon
1 egg
1 tsp vanilla
1 cup pumpkin (not pumpkin pie mix I’ve made that mistake!)
1 cup chocolate chips (optional)

Toppings for the Best Oatmeal Pumpkin Cookie Recipe! (Your choice but these are my faves!):
peanut butter (This topping is to die for!)
colored frosting (orange and green)
m&m’s
reeces pieces
colored sugar crystals (green and orange)

Directions:
Preheat the oven to 350
In one bowl combine: flour, oats, baking soda, cinnamon and salt
In another bowl combine: cream margarine with mixer and gradually add sugar
Add egg and vanilla with the butter and sugar and mix well alternate adding all dry ingredients, choc chips and pumpkin to the margarine mixture and mix all together
Drop 1/4 cup dough on lightly greased cookie sheets, shape them in to pumpkins with a stem up top
Bake 20-25 minutes
Decorate and top -make as jack o lanterns, people you know or whatever your little one has fun creating!
